Summer Squash and Lemon Squares
I’m in the serious business of hiding summer squash, now. It’s on.
Mix until crumbly, put into a 9” square baking pan, and bake for 15 minutes at 350F:
- 1 C. flour
- 1 stick unsalted butter
- ¼ C. powedered sugar
While that is baking, beat two eggs slightly, add juice and rind of 1 lemon. Sift together:
- 1 C. sugar
- 2 T. flour
- ½ t. baking powder
- 1 summer squash, grated
Add the above to the egg mixture, and pour over the pre-baked crust. Bake about 20 minutes at 325F. Remove from oven and sprinkle with powdered sugar while still warm.
